- 2 large eggs
- Optional: Chopped chives or green onions for added flavor
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix Wet Ingredients:
- In a large mixing bowl, combine the cottage cheese, Greek yogurt, eggs, and chopped chives (if using). Mix until smooth.
- Add Dry Ingredients:
- In a separate bowl, combine the oat flour, baking powder, salt, and everything bagel seasoning.
- Combine Mixtures:
- Gradually add the dry ingredients to the wet mixture, stirring until fully combined and a thick batter forms.
- Shape Wedges:
- Spoon the mixture onto the prepared baking sheet, spreading it out into a round shape about 1/2 inch thick. Cut into wedges, or use a knife to score the top.
- Top and Bake:
- Sprinkle additional everything bagel seasoning on top of the wedges. Bake in the preheated oven for 25-30 minutes until golden brown and firm to the touch.
- Cool and Serve:
- Allow the wedges to cool slightly before cutting again along the scored lines. Serve warm or store in an airtight container.
