Description

Ingredients

  • 3 large Sweet Potatoes, peeled and cubed
  • 1.5 lbs Grass-fed Ground Beef or Lamb
  • 2 tbsp Ghee
  • 1 large Yellow Onion, diced
  • 2 large Carrots, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Tomato Paste (sugar-free)
  • 1 cup Beef Bone Broth
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1/4 cup Full-Fat Coconut Milk
  • Salt and Pepper to taste


Instructions

  1. Boil sweet potatoes until tender, then mash with ghee and coconut milk.
  2. Sauté onions, carrots, and celery in ghee until soft.
  3. Add ground meat and brown thoroughly; drain excess fat.
  4. Stir in garlic, tomato paste, herbs, and broth; simmer until thickened.
  5. Layer meat filling in a baking dish and top with sweet potato mash.
  6. Bake at 400°F for 20-25 minutes, then broil until golden.
