- 3 large Sweet Potatoes, peeled and cubed
- 1.5 lbs Grass-fed Ground Beef or Lamb
- 2 tbsp Ghee
- 1 large Yellow Onion, diced
- 2 large Carrots, diced
- 2 stalks Celery, diced
- 3 cloves Garlic, minced
- 2 tbsp Tomato Paste (sugar-free)
- 1 cup Beef Bone Broth
- 1 tsp Dried Thyme
- 1 tsp Dried Rosemary
- 1/4 cup Full-Fat Coconut Milk
- Salt and Pepper to taste
Instructions
- Boil sweet potatoes until tender, then mash with ghee and coconut milk.
- Sauté onions, carrots, and celery in ghee until soft.
- Add ground meat and brown thoroughly; drain excess fat.
- Stir in garlic, tomato paste, herbs, and broth; simmer until thickened.
- Layer meat filling in a baking dish and top with sweet potato mash.
- Bake at 400°F for 20-25 minutes, then broil until golden.
