Ingredients

  • 1 cup fresh or frozen raspberries (plus extra for garnish)
  • 1 cup Greek yogurt (or cottage cheese)
  • 2 tablespoons honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 scoop vanilla or unflavored protein powder
  • A pinch of salt
  • Whipped cream or coconut cream (optional, for topping)


Instructions

  1. Prepare the Raspberries:
    • If using frozen raspberries, thaw them and drain excess liquid. Rinse fresh raspberries and remove stems.
  2. Blend Ingredients:
    • In a blender or food processor, combine raspberries, Greek yogurt, honey (or maple syrup), vanilla extract, protein powder, and a pinch of salt. Blend until smooth.
  3. Whip the Mixture:
    • Transfer the mixture to a bowl and use a hand mixer to whip until light and fluffy. This creates a mousse-like texture.
  4. Chill:
    • Cover the bowl and refrigerate the mousse for at least 30 minutes to allow it to set.
  5. Serve:
    • Spoon the mousse into serving dishes. Top with whipped cream or coconut cream and garnish with fresh raspberries if desired.

Notes

  • Adjust the sweetness by adding more or less honey/maple syrup based on your preference.
  • If you want a thicker mousse, consider adding more protein powder.
