- 1 cup fresh or frozen raspberries (plus extra for garnish)
- 1 cup Greek yogurt (or cottage cheese)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 scoop vanilla or unflavored protein powder
- A pinch of salt
- Whipped cream or coconut cream (optional, for topping)
Instructions
- Prepare the Raspberries:
- If using frozen raspberries, thaw them and drain excess liquid. Rinse fresh raspberries and remove stems.
- Blend Ingredients:
- In a blender or food processor, combine raspberries, Greek yogurt, honey (or maple syrup), vanilla extract, protein powder, and a pinch of salt. Blend until smooth.
- Whip the Mixture:
- Transfer the mixture to a bowl and use a hand mixer to whip until light and fluffy. This creates a mousse-like texture.
- Chill:
- Cover the bowl and refrigerate the mousse for at least 30 minutes to allow it to set.
- Serve:
- Spoon the mousse into serving dishes. Top with whipped cream or coconut cream and garnish with fresh raspberries if desired.
Notes
- Adjust the sweetness by adding more or less honey/maple syrup based on your preference.
- If you want a thicker mousse, consider adding more protein powder.
