Ingredients

- 2 slices thick-cut sourdough bread
- 1 cup frozen peas, blanched
- 1/2 cup whole milk ricotta cheese
- 1/4 cup fresh mint leaves
- 1 lemon (zested and juiced)
- 2 tbsp extra virgin olive oil
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
- Blanch peas in boiling water for 2 minutes, then shock in an ice bath.
- Whip ricotta in a food processor with lemon juice and salt until fluffy.
- Pulse peas, mint, lemon zest, and olive oil in the processor until coarsely mashed.
- Toast sourdough slices in a pan with olive oil until golden.
- Spread whipped ricotta on toast, top with pea mixture, and garnish with extra mint and salt.
