- 2 lbs fresh strawberries
- 1/2 cup granulated sugar (divided)
- 1 tsp vanilla extract
- 2 cups heavy whipping cream
- 1 lb pound cake or sponge cake, cubed
- 1 tsp lemon zest
- Fresh mint leaves for garnish
Instructions
- Slice strawberries and mix with 3 tbsp sugar and lemon zest; let sit for 30 minutes.
- In a chilled bowl, whip heavy cream with remaining sugar and vanilla until stiff peaks form.
- Cube the cake into bite-sized pieces.
- Layer cake, then strawberries with syrup, then whipped cream into glass cups.
- Repeat layers once more and garnish with a whole strawberry and mint.
Notes
