- 1 tbsp Ube Halaya (purple yam jam)
- 1/4 tsp Ube extract
- 3/4 cup Coconut milk (carton)
- 1/4 cup Full-fat canned coconut milk (for foam)
- 2 shots Espresso
- 1 tbsp Condensed milk or maple syrup
- 1 cup Ice
- 1/2 tsp Vanilla extract
Instructions
- Whisk ube halaya, extract, and sweetener into a smooth paste.
- Fill a tall glass with ice and pour in the carton coconut milk.
- Add the ube mixture and stir gently to create purple swirls.
- Brew and pour two shots of espresso over the milk.
- Froth chilled canned coconut milk with a bit of sweetener until thick and airy.
- Spoon the coconut foam ‘cloud’ on top of the drink.
- Garnish with toasted coconut or ube powder and serve.
