Ingredients

  • 1 tbsp Ube Halaya (purple yam jam)
  • 1/4 tsp Ube extract
  • 3/4 cup Coconut milk (carton)
  • 1/4 cup Full-fat canned coconut milk (for foam)
  • 2 shots Espresso
  • 1 tbsp Condensed milk or maple syrup
  • 1 cup Ice
  • 1/2 tsp Vanilla extract


Instructions

  1. Whisk ube halaya, extract, and sweetener into a smooth paste.
  2. Fill a tall glass with ice and pour in the carton coconut milk.
  3. Add the ube mixture and stir gently to create purple swirls.
  4. Brew and pour two shots of espresso over the milk.
  5. Froth chilled canned coconut milk with a bit of sweetener until thick and airy.
  6. Spoon the coconut foam ‘cloud’ on top of the drink.
  7. Garnish with toasted coconut or ube powder and serve.
