- 2 medium zucchinis, sliced into half-moons
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp olive oil

- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley and lemon wedges for garnish
Instructions
- Sauté diced onion and ground turkey in olive oil until meat is browned.
- Add garlic and spices, stirring for 1 minute.
- Add zucchini and chickpeas to the pan.
- Cook for 5-7 minutes until zucchini is tender-crisp.
- Finish with fresh lemon juice and parsley before serving.
