- 1 lb Ground Turkey
- 1 cup Dry Brown Lentils
- 1 large Yellow Onion
- 1 Green Bell Pepper
- 4 cloves Garlic
- 28 oz Crushed Tomatoes
- 15 oz Diced Tomatoes with Green Chilies
- 4 cups Chicken Broth
- 2 tbsp Chili Powder
- 1 tbsp Cumin
- 1 tbsp Olive Oil
- 1 tbsp Apple Cider Vinegar
- Salt and Pepper to taste
Instructions
- Brown the ground turkey in a large pot with olive oil.
- Add onions, peppers, and garlic; sauté until soft.
- Stir in spices and cook for 1 minute to bloom flavors.
- Add tomatoes, lentils, and broth.
- Simmer on low for 35-45 minutes until lentils are tender.
- Stir in vinegar and adjust seasoning before serving.
