Instructions
- Preheat Oven:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Separate Eggs:
- In a mixing bowl, separate the egg whites from the yolks, placing them in different bowls.
- Mix the Yolks:
- In the bowl with the egg yolks, add the cottage cheese, almond flour, baking powder, and salt. Mix until smooth and fully combined.
- Beat Egg Whites:
- In a separate bowl, use an electric mixer to beat the egg whites until stiff peaks form. This may take a few minutes.
- Combine Mixtures:
- Gently fold the cottage cheese mixture into the beaten egg whites. Be careful not to deflate the egg whites; use a folding motion until just combined.
- Shape and Bake:
- Spoon the mixture onto the prepared baking sheet, forming 6-8 mounds. Flatten them slightly for even cooking.
- Bake for 25-30 minutes, or until golden brown and firm to the touch.
- Cool:
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
