  • 3 large eggs, separated
  • 1/4 cup almond flour (or coconut flour)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: Herbs, spices, or cheese for flavor (e.g., garlic powder, onion powder, or herbs de Provence)


Instructions

  • Preheat Oven:
    • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Separate Eggs:
    • In a mixing bowl, separate the egg whites from the yolks, placing them in different bowls.
  • Mix the Yolks:
    • In the bowl with the egg yolks, add the cottage cheese, almond flour, baking powder, and salt. Mix until smooth and fully combined.
  • Beat Egg Whites:
    • In a separate bowl, use an electric mixer to beat the egg whites until stiff peaks form. This may take a few minutes.
  • Combine Mixtures:
    • Gently fold the cottage cheese mixture into the beaten egg whites. Be careful not to deflate the egg whites; use a folding motion until just combined.
  • Shape and Bake:
    • Spoon the mixture onto the prepared baking sheet, forming 6-8 mounds. Flatten them slightly for even cooking.
    • Bake for 25-30 minutes, or until golden brown and firm to the touch.
  • Cool:
    • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Cloud bread can be stored in an airtight container in the fridge for up to 5 days.
  • You can slice and freeze the bread to extend its shelf life.
