- 3 large overripe bananas
- 2 large eggs
- 1/3 cup melted coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 3/4 cups gluten-free 1:1 baking flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F and line a loaf pan with parchment paper.
- Mash bananas in a large bowl and whisk in oil, maple syrup, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into wet until just combined.
- Pour into pan and bake for 50-60 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes before moving to a wire rack.
