- 1 lb lean ground beef
- 3 cups cooked white rice
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, rinsed
- 1.5 cups chunky salsa
- 1 cup frozen corn
- 2 cups shredded sharp cheddar cheese
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- Brown the ground beef with onions and garlic in a skillet; drain fat.
- Stir in taco seasoning, salsa, beans, and corn; simmer for 5 minutes.
- Mix the meat mixture with cooked rice and half the cheese.
- Transfer to the dish, top with remaining cheese, and bake for 20-25 minutes.
