Ingredients

  • 1 lb Penne or Fusilli pasta
  • 1/2 cup sun-dried tomatoes, julienned
  • 4 cups fresh baby spinach
  • 4 cloves garlic, minced
  • 1 shallot, diced
  • 4.5 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 2 tbsp olive oil


Instructions

  1. Sauté shallots, garlic, and red pepper flakes in olive oil.
  2. Add sun-dried tomatoes and cook for 1 minute.
  3. Add broth, dry pasta, and oregano; bring to a boil.
  4. Simmer on medium-low for 9-12 minutes, stirring occasionally.
  5. Stir in heavy cream and spinach until wilted.
  6. Mix in parmesan cheese and serve.
