Ingredients

- 1 lb Penne or Fusilli pasta
- 1/2 cup sun-dried tomatoes, julienned
- 4 cups fresh baby spinach
- 4 cloves garlic, minced
- 1 shallot, diced
- 4.5 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
Instructions
- Sauté shallots, garlic, and red pepper flakes in olive oil.
- Add sun-dried tomatoes and cook for 1 minute.
- Add broth, dry pasta, and oregano; bring to a boil.
- Simmer on medium-low for 9-12 minutes, stirring occasionally.
- Stir in heavy cream and spinach until wilted.
- Mix in parmesan cheese and serve.
