Description
A delicious, easy-to-make dessert bar featuring the classic combination of sweet strawberries and tart rhubarb with an oat crumble topping.

- 1.5 cups All-purpose flour
- 1 cup Rolled oats
- 1 cup Brown sugar, packed
- 3/4 cup Unsalted butter, cold and cubed
- 1/2 tsp Salt
- 2 cups Fresh strawberries, sliced
- 2 cups Fresh rhubarb, diced
- 1/2 cup Granulated sugar
- 2 tbsp Cornstarch
- 1 tbsp Lemon juice
- 1 tsp Vanilla extract
Instructions
- Preheat oven to 375°F and line an 8×8 pan with parchment.
- Mix flour, oats, brown sugar, salt, and butter to create a crumble.
- Press 2/3 of the crumble into the pan and bake for 10-12 minutes.
- Toss strawberries and rhubarb with granulated sugar, cornstarch, lemon juice, and vanilla.
- Spread fruit over the base and top with the remaining crumble.
- Bake for 30-35 minutes until golden and bubbling.
- Cool completely before slicing.
Notes
High in Vitamin C from fresh fruit, uses whole grain oats, and perfectly balances sweet and tart flavors.
