  • 1/4 cup Greek yogurt or cottage cheese
  • 2 tablespoons fresh herbs (such as dill, chives, or parsley), chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • **Salt and pepper to taste
  • Cooking spray or olive oil (to grease the muffin tin)


Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.
  • Whisk Ingredients:
    • In a large mixing bowl, whisk together the eggs, Greek yogurt (or cottage cheese), garlic powder, onion powder (if using), salt, and pepper until smooth.
  • Add Fillings:
    • Fold in the chopped spinach, feta cheese, and fresh herbs until well combined.
  • Fill Muffin Tin:
    • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake:
    • Bake in the preheated oven for 18-20 minutes or until the egg bites are set and lightly golden on top.
  • Cool and Serve:
    • Allow the egg bites to cool in the tin for a few minutes before gently removing them. Serve warm or store in the refrigerator for up to 5 days.
