- 4 oz dark chocolate, chopped
- 3/4 cup Dutch-processed cocoa powder
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup sourdough discard (room temperature)
- 3 large eggs
- 1 tbsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp sea salt
- 1 tsp espresso powder
Instructions
- Brown the butter in a saucepan until nutty and golden.
- Pour hot butter over chopped chocolate and whisk until smooth.
- Whisk eggs and sugars for 3-5 minutes until pale and thick.
- Stir chocolate mixture, sourdough discard, and vanilla into the egg mixture.
- Fold in flour, salt, and espresso powder until just combined.
- Bake in an 8×8 pan at 350°F for 25-30 minutes.
