- 3 medium overripe bananas
- 1/2 cup sourdough discard
- 1/2 cup melted unsalted butter
- 3/4 cup dark brown sugar
- 1 large egg
- 1 tbsp vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Instructions
- Preheat oven to 350°F and line a loaf pan.
- Mash bananas and mix with butter, sugar, egg, vanilla, and sourdough discard.
- Whisk dry ingredients in a separate bowl.
- Gently fold dry ingredients into the wet mixture until just combined.
- Add any optional nuts or chocolate chips.
- Bake for 55-65 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then move to a wire rack.
