- 1 cup sourdough discard
- 1.5 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/3 cup milk
- 1 egg
- 1 tsp vanilla extract
- 2 large Granny Smith apples, diced
- Neutral oil for frying
- 1.5 cups powdered sugar (glaze)
- 2 tbsp milk (glaze)
Instructions
- Whisk dry ingredients (flour, sugar, spices, baking powder) in a large bowl.
- Combine wet ingredients (discard, milk, egg, vanilla) and fold into dry ingredients.
- Fold in finely diced apples.
- Heat oil to 350°F in a heavy pot.
- Drop 1/4 cup portions of batter into oil and fry for 2-3 minutes per side until golden.
- Drain on paper towels, then dip into a whisked glaze of powdered sugar and milk.
