- 3-4 lb corned beef brisket with spice packet
- 2 large yellow onions, wedged
- 5 large carrots, chopped into chunks
- 1 lb red potatoes, halved
- 4 cloves garlic, smashed
- 3 cups beef broth
- 1 small head cabbage, wedged
Instructions
- Layer onions, carrots, and potatoes in the bottom of a 6-quart slow cooker.
- Rinse the corned beef and place it on top of the vegetables, fat-side up.
- Sprinkle the spice packet over the meat and add garlic.
- Pour beef broth into the slow cooker without washing spices off the meat.
- Cover and cook on LOW for 8-10 hours.
- Add cabbage wedges during the last 2 hours of cooking.
- Rest the meat for 15 minutes before slicing against the grain.
