- 2 Tablespoons Unsalted Butter

Instructions
- Slice potatoes and leeks thinly; clean leeks thoroughly.
- Whisk eggs with cream, salt, pepper, half the cheese, and half the chives.
- Sauté potato slices in butter until golden and tender.
- Add leeks and cook until soft and translucent.
- Pour egg mixture over vegetables and cook on stovetop until edges set.
- Top with remaining cheese and bake at 375°F for 8-10 minutes.
- Garnish with remaining chives and let rest before slicing.
