- 1.5 lbs Lean Ground Turkey
- 3 Medium Zucchinis, sliced
- 1 Yellow Onion, diced
- 4 Cloves Garlic, minced
- 15 oz Crushed Tomatoes
- 1.5 cups Shredded Mozzarella
- 0.5 cup Grated Parmesan
- 1 tsp Dried Oregano
- 1 tsp Dried Basil
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Slice and salt the zucchini to remove excess moisture; pat dry after 20 minutes.
- Brown the ground turkey with onions and garlic in a skillet.
- Add crushed tomatoes and spices to the turkey and simmer for 10 minutes.
- Layer the turkey sauce and zucchini in a 9×13 baking dish, topping with cheese.
- Bake at 375°F for 35-40 minutes until bubbly and golden.
