- 3-4 overripe bananas
- 1/2 cup sourdough discard
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar
- 1 large egg
- 1 tbsp vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F and grease a 9×5 loaf pan.
- Mash bananas in a large bowl.
- Mix in melted butter, sugar, egg, vanilla, and sourdough discard.
- Whisk dry ingredients in a separate bowl and fold into the wet mixture.
- Bake for 55-65 minutes until a toothpick comes out clean.
- Cool on a wire rack before slicing.
