- 1 lb Ground Beef
- 2 medium Yukon Gold potatoes, diced
- 2 carrots, diced
- 1/2 white onion, finely chopped
- 3 cloves garlic, minced
- 8 oz tomato sauce
- 1 cup beef broth
- 1/2 cup frozen peas
- 1 tsp ground cumin
- 1/2 tsp dried Mexican oregano
- Salt and pepper to taste
- 1 tbsp vegetable oil
Instructions
- Brown the ground beef in a large skillet and drain excess fat.
- Add onions and garlic, sautéing until translucent.
- Stir in diced potatoes and carrots.
- Add tomato sauce, beef broth, and spices; bring to a simmer.
- Cover and cook for 15-20 minutes until potatoes are tender.
- Stir in peas and cook for 5 more minutes.
- Serve warm with rice or tortillas.
