- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 2 cups Lucky Charms cereal
- 1 tsp baking soda
- 1 tsp cornstarch
- 1/2 tsp salt
Instructions
- Separate the marshmallows from the oat pieces in the Lucky Charms cereal.
- Cream butter and sugars together until light and fluffy.
- Mix in eggs and vanilla extract.
- Combine dry ingredients, including a portion of crushed cereal oat pieces.
- Fold the remaining cereal and most of the marshmallows into the dough.
- Chill the dough for 30 minutes.
- Scoop and bake at 350°F for 9-11 minutes.
- Top with remaining marshmallows while warm and cool on a rack.
