Ingredients

- 6 large Russet potatoes
- 2 tbsp Olive oil
- 1 tbsp Flaky sea salt
- 1 cup Sour cream
- 2 cups Shredded cheddar cheese
- 1/2 cup Cooked bacon bits
- 1/4 cup Fresh chives, chopped
- 1 cup Warm beef chili
- 1 cup Baked beans
- 1/2 cup Pickled jalapeños
Instructions
- Scrub and dry potatoes, then prick with a fork.
- Coat with olive oil and sea salt.
- Bake at 400°F (200°C) for 60-70 minutes until crispy.
- Prep toppings in small bowls while potatoes bake.
- Cut a cross in the potatoes and fluff the centers.
- Arrange potatoes and toppings on a large board and serve.
