Description

A vibrant and healthy one-pan meal featuring flaky salmon fillets and tender baby bok choy glazed in a zesty honey-lime ginger sauce.


Ingredients

  • 4 Salmon fillets (6 oz each)
  • 1 lb Baby bok choy, halved
  • 3 tbsp Honey
  • 2 tbsp Fresh lime juice
  • 2 tbsp Soy sauce
  • 1 tbsp Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1 tsp Sesame oil
  • Toasted sesame seeds and green onions for garnish


Instructions

  1. Preheat oven to 400°F and line a sheet pan with parchment.
  2. Whisk honey, lime juice, soy sauce, ginger, garlic, and sesame oil.
  3. Toss bok choy with olive oil and place on the pan.
  4. Place salmon on the pan and brush with 2/3 of the glaze.
  5. Roast for 12-15 minutes until salmon flakes easily.
  6. Brush with remaining glaze and garnish before serving.
