An incredibly comforting and easy-to-make slow cooker meal featuring layers of seasoned ground beef, tender potatoes, and melted cheddar cheese.

- 1.5 lbs Lean Ground Beef
- 4 Large Russet Potatoes, sliced
- 1 Large Yellow Onion, diced
- 3 Cloves Garlic, minced
- 1 Cup Frozen Peas and Carrots
- 1 Can Cream of Mushroom Soup
- 1/2 Cup Sour Cream
- 2 Cups Shredded Sharp Cheddar Cheese
- 1 Teaspoon Smoked Paprika
- Salt and Black Pepper to taste
- Fresh Parsley for garnish
Instructions
- Brown the ground beef and onions in a skillet; drain fat and add garlic.
- Whisk together the soup, sour cream, and spices in a bowl.
- Layer sliced potatoes in the bottom of the slow cooker.
- Add layers of beef, vegetables, and cheese over the potatoes.
- Pour the soup mixture over the layers.
- Cook on Low for 7-8 hours or High for 4 hours.
- Top with remaining cheese 15 minutes before serving until melted.
