Ingredients

  • 1.5 lbs Lean Ground Beef
  • 4 Large Russet Potatoes, sliced
  • 1 Large Yellow Onion, diced
  • 3 Cloves Garlic, minced
  • 1 Cup Frozen Peas and Carrots
  • 1 Can Cream of Mushroom Soup
  • 1/2 Cup Sour Cream
  • 2 Cups Shredded Sharp Cheddar Cheese
  • 1 Teaspoon Smoked Paprika
  • Salt and Black Pepper to taste
  • Fresh Parsley for garnish


Instructions

  1. Brown the ground beef and onions in a skillet; drain fat and add garlic.
  2. Whisk together the soup, sour cream, and spices in a bowl.
  3. Layer sliced potatoes in the bottom of the slow cooker.
  4. Add layers of beef, vegetables, and cheese over the potatoes.
  5. Pour the soup mixture over the layers.
  6. Cook on Low for 7-8 hours or High for 4 hours.
  7. Top with remaining cheese 15 minutes before serving until melted.
