- 1 lb Ground Beef
- 1 medium Yellow Onion, diced
- 3 cloves Garlic, minced
- 10 oz Red Enchilada Sauce
- 15 oz Black Beans, rinsed and drained
- 10 oz Corn (frozen or canned)
- 10 oz Diced Tomatoes with Green Chiles
- 32 oz Beef Broth
- 4 oz Cream Cheese, softened
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Smoked Paprika
- Salt and Pepper to taste
Instructions
- Brown the ground beef in a large pot and drain excess fat.
- Sauté diced onions and garlic with the beef until softened.
- Stir in spices (chili powder, cumin, paprika) for 1 minute.
- Add enchilada sauce, beef broth, tomatoes, beans, and corn.
- Simmer for 15-20 minutes over medium-low heat.
- Stir in softened cream cheese until melted and creamy.
- Serve hot with your favorite toppings like tortilla chips and avocado.
