Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 6 cloves Garlic, minced
  • 2 tbsp fresh Rosemary
  • 2 tbsp fresh Thyme
  • 2 tbsp fresh Parsley
  • 1/2 cup Unsalted Butter
  • 1/2 cup Heavy Cream
  • 2 tbsp Olive Oil
  • 1/4 cup Chicken Broth
  • Salt and Pepper to taste


Instructions

  1. Boil peeled and cubed potatoes until tender.
  2. Season chicken with salt, pepper, and half the herbs.
  3. Sear chicken in olive oil until golden and cooked through; remove from pan.
  4. Make a pan sauce by sautéing garlic in butter, deglazing with broth, and adding remaining herbs.
  5. Mash potatoes with butter and cream until smooth.
  6. Serve chicken over potatoes and drizzle with the herb butter sauce.
