Ingredients

- 1.5 lbs Chicken Breasts
- 2 lbs Yukon Gold Potatoes
- 6 cloves Garlic, minced
- 2 tbsp fresh Rosemary
- 2 tbsp fresh Thyme
- 2 tbsp fresh Parsley
- 1/2 cup Unsalted Butter
- 1/2 cup Heavy Cream
- 2 tbsp Olive Oil
- 1/4 cup Chicken Broth
- Salt and Pepper to taste
Instructions
- Boil peeled and cubed potatoes until tender.
- Season chicken with salt, pepper, and half the herbs.
- Sear chicken in olive oil until golden and cooked through; remove from pan.
- Make a pan sauce by sautéing garlic in butter, deglazing with broth, and adding remaining herbs.
- Mash potatoes with butter and cream until smooth.
- Serve chicken over potatoes and drizzle with the herb butter sauce.
