- 1 lb Jumbo Shrimp, peeled and deveined
- 1 can (13.5 oz) Full-fat Coconut Milk
- 5 cloves Garlic, minced
- 2 tbsp Coconut Oil
- 1 tbsp Fresh Lime Juice
- 1/2 tsp Red Chili Flakes
- 1/4 cup Fresh Cilantro, chopped
- Salt and Pepper to taste
Instructions
- Pat shrimp dry and season with salt and pepper.
- Sauté garlic and chili flakes in coconut oil until fragrant.
- Sear shrimp on high heat for 2 minutes per side; remove and set aside.
- Simmer coconut milk in the same pan until slightly thickened.
- Return shrimp to the pan, add lime juice, and toss to coat.
- Garnish with cilantro and serve over rice.
