- 1/2 cup Creamy Almond Butter
- 2 Large Eggs
- Zest of 2 Lemons
- 3 tbsp Lemon Juice
- 2 tbsp Poppy Seeds
- 1/4 cup Maple Syrup or Monk Fruit
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- Pinch of Sea Salt
Instructions
- Preheat oven to 350°F and line a muffin tin.
- Whisk almond butter, eggs, sweetener, lemon juice, and vanilla until smooth.
- Stir in lemon zest.
- Fold in protein powder, baking powder, and salt.
- Gently fold in poppy seeds.
- Distribute batter into 9-10 muffin cups.
- Bake for 18-22 minutes until golden.
- Cool for 10 minutes before serving.
