- 1 cup cottage cheese (low-fat or full-fat)
- 1 cup almond flour
- 1/3 cup honey (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup almond slices or chopped nuts (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Ingredients:
- In a large mixing bowl, combine cottage cheese, almond flour, honey, vanilla extract, baking powder, and salt. If using, add cinnamon and almond slices.
- Combine Well:
- Mix the ingredients until well combined. The dough should be thick and slightly sticky.
- Scoop the Dough:
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake:
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Cool:
- Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- You can customize the cookies by adding chocolate chips, dried fruit, or other nuts.
- Store cookies in an airtight container in the refrigerator for up to a week.
