Description

These healthy cookies are made with almond flour and cottage cheese, sweetened with honey. They are soft, chewy, and perfect for a delicious snack or dessert!


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 cup almond flour
  • 1/3 cup honey (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup almond slices or chopped nuts (optional)
  • 1/2 teaspoon cinnamon (optional)


Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Ingredients:
    • In a large mixing bowl, combine cottage cheese, almond flour, honey, vanilla extract, baking powder, and salt. If using, add cinnamon and almond slices.
  • Combine Well:
    • Mix the ingredients until well combined. The dough should be thick and slightly sticky.
  • Scoop the Dough:
    • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  • Cool:
    • Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
