1 prepared vanilla or chocolate cake, crumbled

1/2 cup raspberry jam (for filling)

1/2 cup cream cheese frostingWhite chocolate, melted (for coating)

Red and blue food coloring (for veins and iris)

Black gel icing or melted dark chocolate (for pupil)

Instructions

  • Make the Cake Balls:
    • In a large mixing bowl, combine the crumbled cake with the cream cheese frosting. Mix until the ingredients form a dough-like consistency.
    • Roll the mixture into small balls, about 1 inch in diameter. Use your finger to make a small indentation in the center of each ball, and spoon in a bit of raspberry jam. Carefully seal the ball, smoothing out the surface to hide the jam.
  • Insert the Sticks:
    • Melt a small amount of white chocolate and dip the tip of each lollipop stick into it. Insert the stick halfway into each cake ball to ensure it stays in place.
    • Place the cake pops in the refrigerator to chill for about 15-20 minutes, allowing them to firm up.
  • Coat with White Chocolate:
    • Once chilled, dip each cake pop into the melted white chocolate, making sure to coat them fully. Tap off any excess chocolate and stand the pops upright in a foam block or a container to dry.
  • Decorate the Eyes:
    • After the white chocolate coating has hardened, take the blue food coloring or melted chocolate and paint the iris in the center of each pop.
    • Add a small dot of black gel icing or melted dark chocolate in the middle of the iris for the pupil.
    • For the veins, use a thin brush dipped in red food coloring to draw squiggly lines radiating out from the iris, giving your cake pops a more realistic eyeball look.
  • Chill:
    • Allow the decorated cake pops to chill in the fridge for another 15 minutes before serving to ensure everything is set properly.
