- 1/2 tsp Baking Soda

- 4 tbsp Cold Butter (for streusel)
Instructions
- Preheat oven to 375°F and line a muffin tin.
- Prepare the streusel by mixing flour, brown sugar, cinnamon, and cold butter.
- Whisk dry ingredients in a large bowl.
- Mix wet ingredients including sourdough discard in a separate bowl.
- Combine wet and dry ingredients, folding gently until just mixed.
- Fill muffin cups 3/4 full and top with streusel.
- Bake for 18-22 minutes and cool on a wire rack.
