- 1 lb Large Shrimp, peeled and deveined
- 1 Red Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 Medium Zucchini, sliced
- 1/2 Red Onion, sliced
- 2 tbsp Cajun Seasoning
- 2 tbsp Olive Oil
- 3 cloves Garlic, minced
- Fresh Parsley for garnish
- 1 Lemon, cut into wedges
Instructions
- Toss shrimp with 1 tbsp oil and 1 tbsp Cajun seasoning.
- Sear shrimp in a hot skillet for 2 mins per side; remove and set aside.
- Sauté peppers, onions, and zucchini with remaining oil and seasoning until tender-crisp.
- Add garlic and cook for 1 minute.
- Return shrimp to the pan, toss to combine, and garnish with parsley and lemon.
