- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 1 tbsp Lemon zest
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 2 Large eggs
- 1/2 cup Sour cream
- 1/2 cup Vegetable oil
- 2 tbsp Lemon juice
- 1 tsp Vanilla extract
- 1.5 cups Blueberries
Instructions
- Preheat oven to 350°F and grease a loaf pan.
- Rub lemon zest into sugar until fragrant.
- Whisk in eggs, oil, sour cream, lemon juice, and vanilla.
- Gently fold in dry ingredients and flour-coated blueberries.
- Bake for 55-65 minutes until a toothpick comes out clean.
- Cool completely and top with optional lemon glaze.
