- 4-6 Bone-in, skin-on chicken thighs
- 1.5 cups Long-grain white rice
- 3 cups Chicken broth
- 1/2 cup Heavy cream
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 2 tbsp Butter
- 2 tbsp All-purpose flour
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- Salt and pepper to taste
- Fresh thyme
Instructions
- Season and sear chicken thighs in a skillet until golden; remove and set aside.
- Sauté onions, celery, and garlic in the same pan with butter.
- Add rice and toast for 2 minutes, then stir in flour.
- Slowly add broth and bring to a simmer.
- Return chicken to the pan, cover, and cook for 20 minutes.
- Stir in heavy cream and rest for 5 minutes before serving.
