Ingredients

  • 1 lb Salmon fillets
  • 12 oz Pasta (Penne or Fettuccine)
  • 1.5 cups Heavy cream
  • 4 cloves Garlic, minced
  • 1 Shallot, diced
  • 1 Lemon (zested and juiced)
  • 2 tbsp Fresh dill, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 tbsp Butter
  • 1 tbsp Olive oil
  • 2 cups Fresh baby spinach
  • Salt and pepper to taste


Instructions

  1. Boil pasta in salted water until al dente, reserving 1 cup of pasta water.
  2. Sear seasoned salmon in olive oil until cooked through, then remove and flake.
  3. Sauté shallots and garlic in butter, then add heavy cream and simmer.
  4. Stir in lemon juice, zest, and Parmesan cheese to thicken the sauce.
  5. Toss pasta and spinach into the sauce until wilted.
  6. Fold in the flaked salmon and fresh dill before serving.
