- 1 lb ground beef
- 16 oz rotini pasta
- 2 cans (10 oz) Ro-Tel diced tomatoes and green chilies
- 8 oz cream cheese, softened
- 2 cups shredded sharp cheddar cheese
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 tbsp taco seasoning
- Salt and pepper to taste
Instructions
- Cook pasta in salted water until al dente.
- Brown ground beef and onion in a large skillet; drain grease.
- Add garlic and taco seasoning, sauté for 1 minute.
- Stir in undrained Ro-Tel cans.
- Add cream cheese and stir until melted.
- Pour in heavy cream and shredded cheese, stirring until smooth.
- Toss cooked pasta into the sauce and serve.
