- 3-4 lb Corned Beef Brisket with spice packet
- 1 large yellow onion, wedged
- 5 cloves garlic, smashed

- 1.5 lbs red potatoes, halved
- 1 head green cabbage, cut into wedges
- 2 bay leaves
- 1 tsp black peppercorns
- 1 tbsp brown sugar
- Water or beef broth
Instructions
- Rinse the corned beef thoroughly to remove excess salt.
- Optional: Sear the fat cap of the brisket in a large pot.
- Submerge meat in liquid with aromatics and simmer for 2.5 to 3 hours.
- Skim any foam or impurities from the surface of the liquid.
- Add potatoes and carrots; simmer for 20 minutes.
- Place cabbage wedges on top and cook until tender (about 15-20 minutes).
- Rest the meat for 15 minutes and slice against the grain to serve.
