- 5-6 Large Russet Potatoes
- 1 Large Yellow Onion, diced
- 3 Carrots, diced
- 1 Cup Frozen Peas
- 3 Garlic Cloves, minced
- 2 Tablespoons Tomato Paste
- 1 Cup Beef Broth
- 1 Tablespoon Worcestershire Sauce
- 1/2 Cup Heavy Cream
- 4 Tablespoons Unsalted Butter
- 1 Teaspoon Dried Thyme
- Salt and Black Pepper to taste
- 1 Cup Shredded Sharp Cheddar (optional)
Instructions
- Boil peeled potato chunks until tender, then mash with cream, butter, and salt.
- Brown ground beef in a skillet and drain fat.
- Sauté onions, carrots, and garlic with the meat until softened.
- Stir in tomato paste, beef broth, Worcestershire sauce, and thyme; simmer to thicken.
- Fold in frozen peas and transfer mixture to a baking dish.
- Spread mashed potatoes over the meat, creating ridges with a fork.
- Bake at 400°F for 20-25 minutes until golden brown.
