A creamy, buttery Irish mashed potato dish folded with tender sautéed cabbage and scallions, perfect as a hearty side or main comfort dish.
Ingredients

- 2.5 lbs potatoes (Yukon Gold or Russet)
- 4 cups shredded green cabbage
- 1/2 cup unsalted butter (Irish butter preferred)
- 1/2 cup heavy cream or whole milk
- 4-5 scallions, thinly sliced
- 2 cloves garlic, minced (optional)
- Salt and black pepper to taste
Instructions
- Peel and boil potatoes in salted water until tender, then drain.
- Sauté cabbage and garlic in half the butter until soft; stir in scallions at the end.
- Heat remaining butter and cream/milk together.
- Mash potatoes while gradually adding the warm dairy mixture.
- Fold the cabbage mixture into the mashed potatoes and season to taste.
