- 2 lb Center-cut beef tenderloin
- 1.5 lb Cremini mushrooms
- 8-10 slices Prosciutto di Parma
- 1 sheet All-butter puff pastry
- 2 tbsp English Mustard
- 2 Egg yolks
- 2 Shallots, finely diced
- 3 cloves Garlic, minced
- Fresh thyme and rosemary
- Salt and black pepper
Instructions
- Sear the beef on all sides and brush with English mustard.
- Finely mince and sauté mushrooms with shallots and herbs until dry.
- Lay out prosciutto, spread mushroom duxelles over it, and wrap the beef tightly in plastic wrap.
- Chill for 30 minutes.
- Wrap the beef log in puff pastry and seal with egg wash.
- Chill for another 20 minutes.
- Brush with egg wash, score the pastry, and bake at 425°F until the internal temperature reaches 125°F.
