- 1 can (15 oz) lychees in syrup
- 1 tbsp gelatin powder or agar-agar
- 2 cups sparkling water or jasmine tea
- 2 tbsp honey or agave
- 1 tbsp lemon juice
- Fresh mint for garnish

Instructions
- Bloom gelatin in lychee syrup, heat until dissolved, and chill in a flat dish until set.
- Simmer blueberries with honey and water, then strain to create a smooth syrup.
- Cut the set lychee jelly into small cubes and slice the lychee fruit.
- Layer blueberry syrup, ice, jelly cubes, and lychee fruit in a tall glass.
- Top with sparkling water or tea, garnish with mint, and serve.
