Ingredients

  • 1 can (15 oz) lychees in syrup
  • 1 tbsp gelatin powder or agar-agar
  • 2 cups sparkling water or jasmine tea
  • 2 tbsp honey or agave
  • 1 tbsp lemon juice
  • Fresh mint for garnish
  • Ice


Instructions

  1. Bloom gelatin in lychee syrup, heat until dissolved, and chill in a flat dish until set.
  2. Simmer blueberries with honey and water, then strain to create a smooth syrup.
  3. Cut the set lychee jelly into small cubes and slice the lychee fruit.
  4. Layer blueberry syrup, ice, jelly cubes, and lychee fruit in a tall glass.
