- 2 cups Rolled Oats
- 1/2 cup Almond Flour
- 1/4 cup Maple Syrup
- 1/4 cup Melted Coconut Oil
- 1/2 tsp Sea Salt
- 1 cup Greek Yogurt
- 4 oz Softened Cream Cheese
- 1 Large Egg
- 2 tbsp Fresh Lemon Juice
- 1 tbsp Lemon Zest
- 1.5 cups Fresh Blueberries
- 1 tsp Cornstarch
Instructions
- Preheat oven to 350°F and line an 8×8 pan with parchment.
- Mix oats, almond flour, syrup, oil, and salt to create the crust; reserve 1/2 cup.
- Press crust into pan and bake for 10 minutes.
- Whisk yogurt, cream cheese, egg, lemon juice, and zest until smooth.
- Toss blueberries with cornstarch and spread over the filling in the pan.
- Top with reserved crumble and bake for 25-30 minutes.
- Cool and chill for at least 2 hours before slicing.
