- 1 lb Large Shrimp (peeled and deveined)
- 1/2 cup Cornstarch
- 1/2 cup All-purpose Flour
- 1 tsp Baking Powder
- 1/2 cup Ice cold water
- 1 cup Shredded coconut
- 1/2 cup Mayonnaise
- 3 tbsp Sweetened condensed milk
- 2 tbsp Coconut milk
- 1 tsp Lemon juice
- Vegetable oil for frying
Instructions
- Dry the shrimp and dredge in cornstarch.
- Whisk flour, baking powder, and ice water to make a batter.
- Heat oil to 350°F in a heavy pot.
- Dip shrimp in batter and fry for 2-3 minutes until golden.
- Whisk mayonnaise, condensed milk, coconut milk, and lemon juice.
- Toss hot shrimp in the sauce.
- Garnish with shredded coconut and serve.
