Ingredients

- 1 lb Salmon fillets
- 1 cup Sushi rice
- 2 tbsp Rice vinegar
- 1 tbsp Sugar
- 1 tsp Salt
- 1 Avocado, sliced
- 1 Cucumber, diced
- 1/4 cup Kewpie Mayo
- 1 tbsp Sriracha
- 2 sheets Nori, shredded
- 1 tbsp Furikake seasoning
Instructions
- Cook and season the sushi rice with vinegar, sugar, and salt.
- Bake the salmon at 400°F for 12-15 minutes until flaky.
- Whisk together mayo and sriracha for the dressing.
- Assemble the bowl with a rice base, topped with flaked salmon and vegetables.
- Drizzle with spicy mayo and garnish with nori and furikake.
