- 1 lb Jumbo Shrimp, peeled and deveined
- 1/2 cup All-purpose flour
- 2 large Eggs, beaten
- 1 cup Unsweetened shredded coconut
- 1/2 cup Panko breadcrumbs
- 1 tsp Garlic powder
- 1 tsp Smoked paprika
- Salt and pepper to taste
- Coconut oil spray
Instructions
- Set up a breading station with flour/spices, egg wash, and coconut/Panko mix.
- Dry the shrimp thoroughly with paper towels.
- Dredge each shrimp in flour, then egg, then the coconut mixture, pressing to adhere.
- Preheat air fryer to 390°F.
- Place shrimp in a single layer and spray with oil.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown.
