Ingredients

  • 3 Large Sweet Potatoes
  • 1 Large Onion
  • 2 Large Carrots

  • 2 Tablespoons Tomato Paste
  • 1 Cup Beef Stock
  • 1 Tablespoon Worcestershire Sauce
  • Fresh Rosemary and Thyme
  • 2 Tablespoons Butter
  • 1/4 Cup Milk


Instructions

  1. Boil and mash sweet potatoes with butter and milk.
  2. Brown the lamb in a skillet and remove excess fat.
  3. Sauté onions, carrots, and garlic until soft.
  4. Stir in tomato paste, stock, herbs, and lamb; simmer until thickened.
  5. Fold in frozen peas and season to taste.
  6. Layer lamb mixture in a dish and top with mashed sweet potatoes.
  7. Bake at 400°F for 20-25 minutes until golden.
