Panna Cotta Eyeballs Recipe
Ingredients
For the Panna Cotta:
1 cup heavy cream
1 cup whole milk
1/2 cup granulated sugar
2 teaspoons unflavored gelatin (about 2 packets)
2 teaspoons vanilla extract
A pinch of salt
For the “Eyeball” Decoration:
1/2 cup blueberry or black currant jam (for the “pupil”)
Fresh blueberries or blackberries (for the “iris”)
Red gel food coloring or strawberry syrup (for veins)
Instructions
1. Prepare the Panna Cotta:
Bloom the Gelatin:
In a small bowl, sprinkle the gelatin over 3 tablespoons of cold water and let it sit for about 5 minutes until it becomes gelatinous.
Heat the Cream Mixture:
In a saucepan, combine the heavy cream, milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.
Dissolve the Gelatin:
Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.
Add Vanilla:
Stir in the vanilla extract.
Pour into Molds:
Pour the mixture into round silicone molds (or small cups) and refrigerate for at least 4 hours, or until set.
2. Assemble the Eyeballs:
Remove the Panna Cotta from Molds:
Once the panna cotta is set, gently remove them from the molds.
Create the Eyeball Design:
Place a small spoonful of blueberry or black currant jam in the center of each panna cotta for the pupil.
Add a fresh blueberry or blackberry on top of the jam for the iris.
Add the Veins:
Using a toothpick, drizzle red gel food coloring or strawberry syrup around the panna cotta to create a veiny effect, resembling bloodshot eyes.
